Ipomoea batatas – Purple Sweet Potato (plant)
Ipomoea batatas is a member of the Convolvulaceae family thought to be originally from Central America, now being grown world wide with an annual production exceeding 100 million T. Leaves and tubers can be eaten and it is also used for animal feed.
This is a purple Asian variety. Very vigorous growth and production of medium sized purple fleshed tubers with a very high anthocyanin content, which has been shown to have many health benefits. A more starchy type of sweet potato than other varieties we get in Australia, like the orange fleshed variety Beauregard, which can be overly sweet. Other varieties also get more sweet with storage time, as the starch is converted to sugars.
Care and Cultivation of Ipomoea batatas
Ipomoea batatas grow best in areas of 750-2000mm annual rainfall and take approx. 3-5 months for tubers to be ready. Well drained soil in a full sun position. Cultivate soil for best tuber production. Fertilise initially but not too much or tuber growth will be at the expense of increased leaf growth.
